Crumpets

350 t55
42 yeast / 14 dry yeast
1 tsp fine sugar
350 warm milk
150 warm water
1/2 bicarbonate of soda
salt

Disolve yeast & sugar in milk
add to flour
dough hook speed 2, 5 minutes

rest 20 minutes

Mix the bicarbonate of soda and salt with the warm water
add to batter

rest 20 minutes

4-5 minutes, medium heat, each side
